Coconut sugar is sold by mesh. The granulated lines run from 12 to 14 mesh at the coarse end to 50 mesh at the fine, and the moisture limits sit between 2 and 4 percent.
The published line is 16 mesh at most, golden brown, with moisture at 2.0 percent at most and ash at 3.0. Its ingredient statement is two words, coconut blossom sap, and sucrose is above 80 percent of it.

+How long does it keep?
The published line states 30 months from production, kept clean and dry, out of sunlight, between 0 and 25°C (32 and 77°F). Most other lines state 24 months.
+What packs does it come in?
Bulk lines ship in 20 kg and 25 kg sacks, in 4 x 5 kg, or as 2 x 12.5 kg in a 25 kg box. Retail lines include 300 g and 454 g pouches, a 227 g jar and a 7 g sachet.
