The noodle is made at 50 to 75 percent moisture, packed as a square or round cake, and held at room temperature for 14 months. Lactic acid and sodium lactate are in the ingredient statement. The standard cut is a 2.3 mm round noodle at 46 cm, with the length set to your bowl, at 160 kcal and 6 g protein per 100 g. The flour is wheat, with modified tapioca starch so the noodle survives the pack. The color is curcumin, not alkali.
